  • the 4 shoulders have rested and marinated in the fridge for the past 24 hours.
  • 1am Sat morning, the smoker is fired up and gets loaded with 4 hunks of meat.
  • Half time! turning the meat after 8 hours at ~230F heat.<br />
The black gold start to  form on the pork shoulders: that sought after crust is a combination of smoke, spices and meat juices caramelized to the meat.
